You need to ensure that the oils and fats you use in the soap offer moisturizing qualities, such as olive oil, Apricot kernel oil etc. It is also a good idea to superfat the soap, which involves adding some extra fat late in the mixing process, which will remain unsaponified (sorry for the technical term, but this means that the excess doesn't all turn into soap) and ensure the soap is nourishing and doesn't dry the skin too much.
